- Measure flour by weight - Scooping flour with a measuring cup adds up to 25% extra flour to a recipe. Using a kitchen scale has greatly improved my baking results and I know that I'm always adding the exact amount of ingredients needed.
- Each step matters - If your recipe calls for room temperature butter, ensure that you give it time to warm up and make sure it hasn't melted. If your recipe calls for chilling the dough, then make sure it's chilled. These steps are important and help produce the proper texture, flavor, and spread in your finished cookies.
- Don't substitute ingredients - Substituting ingredients that the author hasn't tested can result in changes in texture, spread, and flavor. If you can't use the ingredients listed in a recipe, I highly recommend searching for a recipe that's developed for the ingredients you have on hand.
- Store cookies for optimal freshness - Add a slice of bread to your cookie container. It helps add moisture to your cookies while it dries out. Replace your bread as needed and help keep your cookies soft and fresh longer!
