What's better than mimosas at brunch? How about a festive Grinch mimosa for the holiday season! Made with champagne, orange juice, and a splash of blue curacao for a perfectly grinchy green hue.
We served these at Christmas Dinner and everybody loved them. It doesn’t change the taste of a plain mimosa too much, just adds some real fun to it. ★★★★★ - Bonnie

Ingredients and substitutions
- Champagne - A dry champagne works best for mimosas. Since we're mixing it with other ingredients, you can get away with using an inexpensive champagne here. No need to spring for a pricey bottle (unless you want to!).
- Blue curacao - Blue curacao is a citrus flavored liqueur that's tinted with blue. This is what creates the green hue of our mimosas (when mixed with orange juice).
- Orange juice - Any citrus juice works when making mimosas. Orange juice is the classic choice. Mango juice, pineapple juice, and pear juice would all make decent substitutes as far as color goes. Keep in mind that you'll want a yellow/pale orange juice to mix with blue to make a green Christmas mimosa.
- Strawberry garnish - Like in my Grinch punch (non-alcoholic) recipe, we again shaped strawberry slices into hearts for a garnish. A red sugar rim or a maraschino cherry are other great options.
How to make a Grinch mimosa
- Add orange juice to the champagne flute.
- Next, add ½ an ounce of blue curacao.
- Then, top each glass with champagne.
- Add your strawberry garnish and serve!
Tips and tricks
Measure your blue curacao - While mimosas are a simple cocktail that can be eyeballed, be sure to measure the blue curacao. Too much and your drinks will look blue, not green!
Red garnish ideas - Strawberry slices shaped into hearts (shown), maraschino cherries, red sanding sugar rim, raspberries on a cocktail toothpick, blood orange slice, or red glitter swizzle sticks.
Holiday variations - These green mimosas can easily be customized for other holidays like St. Patrick's Day or Halloween (like a witches brew mimosa). Swap out the strawberry garnish with a lime wedge, orange slice, or sugared rim in any color to match the season.
