My s'mores dip starts with a chocolate ganache base. Most recipes call for melted chocolate, which solidifies back into a block as it cools. You can take your time enjoying this recipe; the ganache layer remains soft and easy to scoop even as the dip cools.

Ingredients and substitutions
- Chocolate chips - I prefer and recommend semi-sweet chocolate chips for a rich, less sweet flavor. Milk chocolate chips can be used if you prefer a sweeter dip.
- Heavy cream - Heavy cream is needed to make the chocolate ganache base. This is what makes the chocolate base soft and scoopable even after cooling. Other dairy like half & half can work in a pinch, but keep in mind that your chocolate base will turn out thinner. I don't recommend using milk in this recipe.
- Mini marshmallows - I prefer mini marshmallows because they're easy to scoop into small servings. However, this recipe can also be made with standard size marshmallows.
Tips and tricks
Making chocolate ganache - Add your chocolate chips to a bowl. In a separate bowl (I like to use my glass pyrex measuring cups) heat up the heavy cream in the microwave. Use short, 30 second bursts to ensure your heavy cream doesn't boil over. Once hot, pour the cream over the chocolate chips and allow to melt for 2-3 minutes. Stir until melted and smooth.
Broiling your s'mores dip - Move your oven rack to the top third of the oven, ideally about 6 inches from the broiler. Place your dip into the oven and turn on the broiler. Do not walk away. Stand and watch your s'mores dip as it toasts. Your marshmallows can go from golden brown to burnt in just a few seconds, so it's important not to walk away or do something else during this time.
Don't set a timer and walk away - Rely less on time and more on the look of your dip as it toasts in the oven. It's very important not to walk away once your dip is under the broiler.
Serve warm - Serve your s'mores dip straight from the oven with your favorite crunchy dippers, like graham crackers, apple slices, or pretzels.
Storage
This dip will keep in the refrigerator for up to a week. Reheat leftover dip under the broiler for about 2 to 3 minutes, or until the marshmallows start to bubble and expand.

Even though this dip takes only a few minutes to prepare, you may wish to make your dip ahead of time. Prepare your dip as directed, but before broiling, cover and refrigerate. When you're ready, broil your s'mores dip as directed in the recipe card.

If you'd like to make this in the microwave, keep in mind that your marshmallows will not toast and brown like they do under the broiler. Spread your ganache into a microwave-safe, shallow bowl. Instructions
- In a bowl, add chocolate chips. Set aside.
