You're going to love this lemon mint cooler. It's the perfect mocktail recipe to make on a hot summer day!
Fresh squeezed lemon juice, coconut water, and mint add a tart, tropical flavor that's topped with a splash of club soda. It's light, cooling, and thirst quenching.
Serve lemon mint coolers while sitting poolside this summer. It's the perfect beverage for your next beach vacation or Fourth of July summer party!
Ingredients and substitutions
- Lemon juice - I recommend using fresh squeezed lemon juice for best flavor. Lemon juice could be substituted with lime juice for a different flavor (much like a mojito).
- Simple syrup - I recommend adding a splash of simple syrup, honey, agave, or maple syrup to this mocktail. The sweetness can easily be adjusted to suit your tastes.
- Fresh mint - A must for this recipe. Fresh mint adds a bright, cooling flavor. It's a great way to use up some of that garden mint over the summer!
- Lemon - You'll need at least one lemon round for this recipe. I like to add an extra lemon round as a garnish just before serving.
- Club soda - Adds a light, bubbly flavor to the drink. Club soda can be substituted with mineral water or sparkling water. For a sweeter drink, club soda could be substituted with lemon lime soda like Sprite.
- Coconut water - Adds a light coconut flavor and a little sweetness.
Tips and tricks
Use a highball glass - Use any highball glass around 8 to 12 ounces in size for your lemon mint coolers.
Muddle your ingredients - Add the simple syrup, mint, lemon juice, and lemon round to the glass and lightly muddle until aromatic. If you don't have a muddler, use the handle of a large wooden spoon (like I did in the photo above).
Stir gently - After adding your coconut water and club soda, stir gently until just combined.
Optional garnishes - Add an extra lemon round and mint leaf to the top of your cocktail before serving.
Storage
Lemon mint coolers are best served immediately.
To prepare your ingredients ahead of time, slice a lemon into rounds, clean and dry your mint leaves, and juice a lemon or two (depending on how many mocktails you're making).
