Frozen yogurt bark is a fun and easy recipe that's perfect for breakfast, snacking, or as a post-workout treat. Greek yogurt is topped with granola and berries, frozen, then sliced into easy bite size pieces.
Choose a baking sheet that will fit into your freezer and line it with parchment paper.
Spread Greek yogurt into a thin, ½ inch layer on the parchment paper. Top with granola and berries, pressing lightly into the yogurt to ensure it sticks.
Place baking sheet into freezer and freeze for 2 hours, or until bark is frozen solid. Slice into bite size pieces and serve immediately. Store leftovers in the freezer in an airtight bag or container.
Notes
Frozen yogurt bark should be treated just like ice cream. It will melt after sitting out at room temperature for a few minutes, so it should be enjoyed immediately out of the freezer.
If using larger fruits like strawberries, I recommend slicing into bite size pieces and patting dry before adding to your yogurt.
I recommend using full fat or whole milk yogurt for best results. Low fat or fat free yogurt gets icy when frozen.
