  • 2 tablespoons unsalted butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 and 1/3 cups orzo uncooked
  • 2 and 2/3 cups chicken broth
  • 1 and 1/2 cups frozen peas thawed
  • 3/4 cup grated Parmesan cheese
  • salt and pepper to taste


  • In a saucepan over medium heat, melt butter. Add onion and cook until translucent, about 5 minutes. Then add garlic and cook for 1 minute.
  • Add uncooked orzo and chicken broth. Bring to a boil, cover, and reduce heat to low. Simmer for 10 minutes or until most of the liquid has been absorbed and orzo is al dente. 
  • Over low heat, add peas and Parmesan cheese. Stir until cheese has melted and peas are warmed through. Add salt and pepper as needed to taste. Remove from heat and serve.
