Pumpkin pie overnight oats are an easy, make-ahead breakfast with no cooking involved. This creamy oatmeal recipe includes pumpkin puree, fall spices, and maple syrup - flavors reminiscent of your favorite fall dessert!
In a 16 ounce mason jar or other container with a lid, add oats, milk, yogurt, pumpkin puree, maple syrup, vanilla, and spices. Stir until combined. Seal with a lid and refrigerate at least 8 hours, or overnight.
Just before serving, top with chopped pecans. Oats can be enjoyed cold or microwaved until warmed through.
Notes
Overnight oats will keep for up to 5 days in the refrigerator, but the texture is best within the first 2-3 days.
Greek yogurt can be substituted with an additional ¼ cup of milk, plus a splash of lemon juice or apple cider vinegar.
Old fashioned oats are best for making overnight oats. Steel cut oats will remain very chewy and instant oats will get soggy.
Cinnamon and nutmeg can be substituted with an equal amount of pumpkin pie spice.
