Raspberry Mojito

A longtime summer favorite with a berry twist, my Raspberry Mojito. This drink has a crisp and refreshing citrus flavor, with a hint of sweetness and mint flavor.

  • 10 mint leaves
  • 4 teaspoons simple syrup
  • 12 raspberries
  • 1 lime
  • 4 ounces rum
  • ice
  • 8 ounces club soda


  • In two highball glasses, add five mint leaves and 2 teaspoons of simple syrup to each glass. Using a muddler or the opposite end of a wooden spoon, gently press down on the mint leaves and twist a few times. Take care not to shred the mint leaves, you're just pressing enough to release juices and flavor.
  • Add 6 raspberries to each glass and lightly muddle the berries.
  • Add the juice of half a lime to each glass (using one whole lime between two glasses), then add the rum.
  • Fill each glass with ice, then top with club soda. Serve and enjoy.


Optional: use extra lime wheels or slices as a garnish.
