Easy Oven Roasted Potatoes are a simple side dish that's perfect for your next weeknight meal. These potatoes are crispy, lightly seasoned, and can be customized with your favorite spices.
Preheat oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
Peel and cube potatoes into bite size pieces (about 1" cubes).
In a bowl, combine olive oil, black pepper, salt, garlic powder, and paprika. Add potatoes and toss or stir to coat. Pour potatoes onto parchment lined baking sheet and spread into a single layer.
Roast potatoes in the oven for 30 to 35 minutes, or until potatoes are evenly browned and can be easily pierced through with a fork. Flip halfway through with a spatula to ensure even browning.
Remove from oven and serve immediately.
Notes
To customize with your favorite spice blend, replace garlic powder and paprika with your favorite spices. Try using Cajun Seasoning or Italian Seasoning.
Yukon gold potatoes are my favorite for roasting, followed by red potatoes and russet potatoes.
