Mixed berry sherbet is creamy, sweet, and filled with fresh berries. It's the perfect cold treat for summer. All you need is a blender to get started!

This mixed berry sherbet is just the treat you need for summer. Made with real berries, this sherbet is packed with vitamins, minerals, fiber, and most importantly - fresh flavor!

All you'll need for this recipe is a can of sweetened condensed milk, frozen berries (or your favorite frozen fruit), and a blender.

Serve this mixed berry sherbet as a sweet after-dinner dessert or to cure your sweet tooth cravings during those hot summer months.

Sweetened condensed milk - This ingredient is made with cow's milk that has been cooked down to remove the water. It also contains added sugar and has a very thick consistency. It cannot be substituted with evaporated milk, which contains no sugar at all and has a very thin consistency. Sweetened condensed milk can be substituted with cream of coconut (not coconut cream, which is unsweetened). Keep in mind it will add coconut flavor to the sherbet. Frozen mixed berries - Can also be substituted with your favorite frozen fruits. Try using strawberries, mangoes, or pineapple instead. Make sure you're using the same weight - 16 ounces - no matter the type of fruit chosen.

Blend in fruit slowly - Add about ¼ of your frozen fruit at a time, blend until smooth, and continue until all of your fruit has been added. Filling the blender with frozen fruit is an easy way to jam the blades.

For soft serve consistency - Straight from the blender, your sherbet will have a smooth, soft-serve consistency that melts quickly. Serve it immediately after blending for best results.

For scoopable consistency - After blending, pour your sherbet into a freezer-safe container and freezer for 4 to 5 hours, or until firm.

Storage

Sherbet will keep in the freezer for 2-3 months in a tightly sealed container.

Can I use fresh fruit?

Do you have fresh fruit on hand that you'd like to use instead? You'll need frozen fruit for this recipe, but any fresh fruits can easily be frozen for a few hours before preparing your sherbet. Lay your cleaned, fresh fruit (with stems or greens removed) on a sheet pan lined with parchment paper and freeze for up to four hours. Once frozen, pour into a freezer bag until ready to use.

How can I make this dairy-free?

Sweetened condensed milk can be substituted with cream of coconut (not coconut cream, which is unsweetened). Cream of coconut is a thick, sweetened liquid that is often used in mixed drink recipes. Can I use a food processor?

Yes, a high quality food processor should work just fine to make homemade sherbet.

Ingredients

  • 14 ounces canned sweetened condensed milk
  • 16 ounces frozen mixed berries

Instructions

  • In a blender, add sweetened condensed milk. Add ¼ of berries and blend until smooth. Repeat until all berries have been incorporated.
  • Pour into a container, seal, and freeze for 4-5 hours or until frozen. Serve and enjoy.

Notes

  • Fresh out of the blender, your sherbet will have the consistency of a soft-serve ice cream. It will melt quickly!
  • Mixed berries can be substituted other frozen fruit like mangoes, strawberries, or pineapple. Have fresh fruit on hand? It must be frozen first to achieve the proper consistency. 
  • Sherbet will keep for 2 to 3 months when stored in a tightly sealed container in the freezer.
  • Sweetened condensed milk can be substituted with a homemade sweetened condensed milk, cream of coconut (not coconut cream, they are different), or any sweetened condensed milk substitute made with other types of milk.

      Hi Cheri, there is a section in the post that talks about fresh fruits - I recommend using frozen fruits only for best consistency. If you have fresh fruit on hand, I recommend freezing it for a few hours before preparing the recipe.

      I'm not very familiar with using sugar substitutes, but there are recipes for sugar-free sweetened condensed milk you could try substituting. The sugar helps keep the sherbet soft and scoopable when frozen, so if it's made sugar-free it will probably freeze solid.

      Any recommendations on getting the seeds out from frozen raspberries? Would it be okay if I ran the mixture through a cheesecloth or just leave them in there.

        I'm not sure if the mixture would be thin enough to go through cheesecloth but it's worth a try if the seeds would bother you. You could also try pouring it through a fine mesh sieve into a bowl.
